I though I would share this real simple desert I like to make. I LOVE dark chocolate, so this has it incorporated into it!
Coconut & Dark Chocolate Strawberries/Bananas
1 can of Coconut Milk ( I like whole foods)
1 package of Strawberries
1 Bar of Dark Chocolate ( I used 85% coca, but 70% works really well also)
The first thing you want to do is make sure you stick the coconut milk in the fridge for a day, so it can thicken up. Wash and dry your strawberries, and cut your banana up into 1 inch pieces. Now we have to melt the chocolate. I figured out melting the chocolate on the stove is a lot easier, and helps it not burn. So find a bowl to put the chocolate pieces in that fits right on top of the pan. Bring the water in the pan to a boil, then put the bowl with the chocolate onto it and turn the heat down to low. It will start melting gradually, stir every minute or so. Then, it's a piece of cake from here. Take the strawberries and dip them in the coconut milk and set onto a plate, do the same with the banana chunks. Once all fruit is on plate, drizzle with the chocolate. You can do it the other way too (chocolate with coconut milk drizzle) Stick the plate in freezer for at lease half an hour, and POW they are DONE! Enjoy!!
