Gluten-Free Vanilla Coconut Almond Protein Cookies

Not only is this recipe amazingly delicious, it packs a protein bunch. A great snack to through in your gym bag to have as a treat post workout! It might be hard to only have one or two!

Recipe makes 2 dozen


1/2 cup coconut oil

1/2 cup maple syrup or other sweetener

1 egg

1 teaspoons vanilla extract

1/2 teaspoon baking soda

1 teaspoons hot water

Pinch of salt

1 1/2 cups almond meal

1/2 cup Gaspari Nutrition MyoFusion Elite Vanilla Protein

Raspberry preserves (optional)

Baking Directions

1) Preheat oven to 350 degrees F

2) Mix together the coconut oil and maple syrup. Beat in the egg, and stir in the vanilla. Add baking soda, hot water and salt. Finally, stir in almond flour, and protein powder. Drop by large spoonfuls onto ungreased pans, add a dab of preserves on top (optional).

3) Bake for about 8-10 minutes in the preheated oven, when edges are browned they are finished.
